Wine Time

Elsewhere in this issue we've dealt with the harvesting of Nelson's varied crops. One industry closely associated with the apple harvest is that of wine making. At Redwood's Valley, Giff Tait (well known for his interest in motor racing) operates a small but highly productive winery, and when the apple crop is picked, then Giff really gets to work. We watched the process that turns apples into wine recently and felt it would be of interest to our readers.

In his cool cellar, Giff examines critically a glass of wine

The process starts with the apples leaving the trailer and thence by conveyor to the grinder.

Within this building all manner of fruits are converted into wine

From the grinder the pulp drops into a series of trays

The stacked trays are then compressed, forcing the juice into a container and thence to the main vats, each of which holds about 2000 gals.

Depending on the sweetness desired, often more than a ton of sugar is mixed with the juice.

Final step is the testing of the liquid for alcohol content
